• 2 medium sweet potatoes
• 1 small red chili pepper
• 2 spring onion stalks
• 1 can coconut milk (400ml)
• 1 tablespoon coconut oil
• a pinch of salt/pepper
Chop up the spring onions, chili pepper, and sweet potatoes (cut off the ends, then peel & slice). Add them to pot with coconut oil on medium & cover. let it “sweat” for 15 minutes (occasionally stirring). Now add coconut milk, put lid back on & change stove to low, cook for 10 minutes. Once ready, blend with hand mixer or in vitamix/blender, enjoy!

• 1/2 Butternut Squash
• 3 Medium Carrots
• 1/2 Small Red Onion
• 2.5 cups (570ml) Vegetable Stock
• 1 tablespoon coconut oil
• a pinch of salt/pepper
Chop up the squash, carrots, and onion. turn on stove to medium & mix into pot with coconut oil for about 10-15 minutes & cover (occasionally stirring). now add your vegetable stock, turn stove to high & cover until boiling (shouldn’t take long). now turn stove to low and let simmer for 10-15 minutes, stirring occasionally. Now blend it, either with a portable hand mixer or transfer to vitamix/blender, enjoy!
note: instead of strictly adhering to 2.5 cups vegetable stock, add enough liquid that it almost covers almost everything (but not quite). The vegetable stock can be water + bullion cube, or even chicken stock, or part combination water. Feel free to experiment, once I accidentally left out the red onion, added half a red pepper, used half chicken stock half water, and it still turned out great.
